HART’s Famous Pasta Salad Recipe

INGREDIENTS AND STUFF YOU WILL NEED

I prefer to use Superstore’s “Blue Menu” Lite Mayonaisse, with 50% less fat

You can use use either the Pasta Salad or the Creamy Salad Club House Pasta Prima dressing. The Creamy Salad dressing has the macaroni on it, and I follow the preparation directions from there. However, I like the flavor from just the Pasta Salad dressing and use the other’s preparation directions (not the one on the package)

I recommend you buy this from Sobey’s – 900g of Fusili of the Primo brand, which is low in fat. Some of the other fusili looks different, and Rotini, which looks similar does not taste the same (i.m.o.). Superstore has some fancy fusili in small boxes but it’s vegetable fusili pasta and not recommended in this recipe.

This is my best Tupperware product I’ve purchased about 10 years ago .. because it has an extended rounded top! Great for mixing ingredients such as peppers and the like!

Got a few of these Budweiser Pints during my softball days! I use them to mix my sauces.

Of course, you need a knife to cut your vegetables and some pasta utensils. I like the “Claw” (as I call it) for mixing the pasta salad and doesn’t melt

You need two Red Peppers .. and two Orange Peppers

You need two Yellow Peppers and two Green Peppers. During this batch, they only had these really large green peppers, so I went with using just one green one

A bunch of Broccoli is also necessary

And of course .. you’ll need a large pot to cook your pasta in, and a good metal strainer!

PREPARATION OF THE INGREDIENTS

I cut all of the peppers first in half, and clean them. Then I slice each color group into approximately 1-cm strips

And, then I take these orange peppers into little 1-cm square pieces and place them into a bowl, and place them into the mixing Tupperware bowl

And same thing with the Green Peppers ..

And Same Thing with the Yellow Peppers ..

And same thing with the Red Peppers ..

I put the lid on the tupperware and mix all of these pepper bits together

I clean and break up all the broccoli into little pieces and remove the stems and just leave the crown and heads in a separate container and do not mix it yet with the pepper mixture .. I have several Budweiser pints so I just use that

THE CREAMY PASTA SALAD DRESSING

I start by placing a 1/2-Tablespoon of oil into that Budweiser pint cup.

Then I add 1-cup “plus a heaping tablespoon” of the Lite Mayonaisse into the Budweiser cup

Then I add 1/2-cup of Skim Milk into the Budweiser cup

Then I add the two packages of the Pasta Prima Pasta Salad mixtures into the Budweiser cup

And mix all the ingredients into a nice smooth creamy pasta salad mixture!

Our Papillon dogs Maxxie and Sophie just LOVE watching me make HART’s Famous Pasta Salad because they LOVE eating peppers! So .. C’mon! Let your pets participate in the making of the ingredients πŸ™‚

LET’S MAKE SOME PASTA!

Do I have to say it? First .. you have to boil some water in your pot

I always like to add a tablespoon of HALF-SALT into the boiling water because it helps to prevent bubbles boiling over

Add the Pasta and boil for about 8-10 minutes at high boil, stirring occasionally

When it looks and tastes nice and tender and fluffy, drain the large pot into the strainer in the sink, and pour cold water of the pasta salad and mix it good in the strainer while you are cooling it down.

While the pasta salad is draining, I clean the original large pot that I cooked the pasta in, then pour the cooled off pasta into the pot

And then I add all of the Pepper bits and the Broccoli bits into the pot

And I add the Creamy Pasta Mix that we made earlier, over top of everything!

And stir like crazy until everything is mixed well and the creamy pasta salad mixture is well blended over all of the pasta in the pot

This recipe usually lasts two people for about a week, including lunches and side dishes for dinner. The pictures below show what this recipe got me today!

Counting Points?

I have calculated the average weight watcher points on previous attempts and it averaged to approximately be 3 points per cup of HART’s Famous Pasta Salad (actually 2.8 but we rounded up). I personally think it is less than that and take 5 points for 2 cups .. My wife still takes 3 points for 1 cup. I think when I originally calculated the point count, I was using lite mayonaisse (not blue menu) and regular milk. You can do the math
